RICE NOODLE SOUP WITH CRAB AND SALANGANE NESTS
Ingredients
- Dry salangane nest (1piece or 2 pieces)
- 1 litter of soup
- 200g of sugpo prawn
- 2 crabs full of fat
- Crab-roe
- Rice noodle made from finest flour
- Corianders, spring onions
- Cooking oil, salt, black pepper, sugar, MSG, seasoning
Recipe
- Make sure the salangane nest are clean before you start cooking, keep it dry
- Have crabs clean, remove their lungs, then stir-fry crabs and put them into steam cooker containing soup
- Add sugpo prawns, claws of crabs into the steam cooker
- When sugpo prawns are well-done, take them out and put them into water
- Steam salangane nests separately, cook over a low heat from 20min to 30 min until they are soft
- Put a teaspoon of seasoning and a teaspoon of salt into the soup
- Put rice noodle into the steam cooker
- Put sugpo prawns back to the cooker
- Finally, turn off the steam cooker, put rice noodle in a bowl and add the slangane nests to the prawns and get ready to serve. Sprinkle a little bit spring onions and corianders, sliced chilli as the toppings
